Before you start judging my sandwich just hear me out. First of all it’s not a salad, yay!! Second it’s really good and there is zero tofu involved. All I’m saying is my sister is a carnivore and she liked it, maybe you will too.
This of course is not my original recipe. Isa has one in her cookbook called “chicky tuna salad sandwhich” and I found a lot of variations online as well, so I customized the recipes to my liking. I encourage you to do the same.
Here we go.
You will need:
* 1 can chickpeas
* bell peppers
* spices (chick peas are bland so you will need lots of spices)
* lettuce (not pictured)
Don’t be hating on my celery! I know it’s beat up but I cleaned it and cut off the weird looking parts now it’s yummy and ready for use. Also you see the red thingy on the right corner of my picture? My totally awesome and cheap kitchen aid food processor. I LOVE THAT THING!!! Seriously I love it.
You know the drill. Rinse them and rinse them good. While the chickpeas sit in the strainer go ahead and chop up all your vegetables or in my case I dump them all into my food processor. Sigh . . I love you food processor.
You will need a big mixing bowl to dump your chopped up veggies in. Then you smash (not puree) your chickpeas and add those to your mixing bowl as well.
Mix all your ingredients in the bowl and add your spices to taste. I added pepper, salt and red chili powder. Like always I add hot sauce right before I eat it.
Personally I like mine in a sandwich but you could also eat it as a wrap with romaine lettuce or in a pita if you are trying to cut back on carbs. This recipe takes about 10 minutes to make and it makes about 6 sandwiches. That’s a lunch for the work week!! Simple, easy and yummy.
